The lovely deep mauve colour and the combination of sweet and acidic flavours makes this dressing the perfect match for game salads. I haven’t used much in the way of fruity dressings since the eighties, but this one makes great use of an abundant supply of wild blackberries.
Crush the blackberries in a bowl using a fork, then whisk in the cider vinegar and rapeseed oil. Season with salt and pepper to taste. Leave to stand for about 30 minutes, then push through a sieve with the back of a spoon into a bowl and re-season the dressing if necessary.
