We developed this dressing years ago - for the classic salad that is topped with grated egg to give the look of a mimosa flower. Very rarely do we make the actual dish but we use the dressing in many other salads.

Ingredients

  • ½ tbsp cider vinegar
  • juice of ½ small lemon
  • 1 garlic clove, peeled and halved

Method

Whisk the cider vinegar, lemon juice, garlic, tarragon and oils together or shake in a screw-topped jar or bottle. Season with salt and pepper to taste. Leave to infuse overnight and strain before using.
