You may think this looks and sounds a bit fancy for me, but it is actually very straightforward. It’s amazing how much flavour you can extract from a few really ripe tomatoes in the form of a clear jelly. You may need to order freshwater crayfish in advance from your fishmonger, or you could use lobster or crab.
