I like to serve this with roast chicken when new season’s garlic is available during the spring. Bake the garlic alongside the chicken.

Ingredients

  • 4 heads of new season’s garlic
  • a few sprigs of curly parsley
  • ½

Method

Preheat the oven to 200°C/gas mark 6. Wrap the garlic bulbs in foil and bake them in the oven for 1 hour. Unwrap and leave until cool enough to
