Creamed spinach makes a delicious comforting accompaniment to simply grilled meat or fish. It has a feeling of luxuriousness about it the moment you put it into your mouth. Cooked in this way it almost acts like a sauce for grilled meat or fish.
Bring a pan of salted water to the boil. Plunge in the spinach leaves and cook for 2-3 minutes until tender. Drain in a colander, refresh under the cold tap and squeeze out any excess water.
Tip the spinach into a food processor and blend as smoothly or as coarsely as you wish. You can take it to this stage in advance if you like, then finish at the last minute.
