This smooth, creamy pudding is rather like an Italian panna cotta. We don’t use buttermilk that much in cooking, although in Ireland it’s a fairly commonplace ingredient. You can get hold of it in good supermarkets and dairy shops; otherwise just use Jersey milk.

You can introduce different fruits here as they come into season; in winter a compote of dried fruits or preserved fruits in alcohol works well.
