Strawberry and Sparkling Wine Jelly

I confess to being a bit of a jelly freak. There is no end to what you can make and do with jellies whatever the time of the year. This is a pretty posh jelly and not that cheap to make, but if you’re going to the trouble of picking or buying wild or homegrown strawberries, then it’s worth splashing out on Champagne or, better still, Nyetimber - the best sparkling wine produced in the UK.
