  • 2 (-lb/800-g) live lobsters
  • juice of ½ large

Method

After you buy the lobsters, put them in the fridge under a towel, so they’ll become a bit drowsy. Add the lemon juice to a large pot of water and bring it to a boil. Boil the lobsters one at a time (putting each in head first, and putting the lid on the pot!) for 8 to 10 minutes, until they are dark red. Take each lobster out of the pot with a skimmer and let it cool on a cutting board.
