Bacalao & Shrimp Potpies

I’m writing this recipe for my friend Mo, who, after she’d eaten this in our restaurant, wrote to me that she had to have this recipe because she’d dreamed of the meal. Maybe the same thing will happen to you, so I’m giving it to you, too—with lots of thanks to Jessica, who dutifully wrote this down with me.

Be sure to start this recipe a day in advance, as the salt cod will need to soak for at least 24 hours.
