Ingredients

  • 1 head of garlic, separated into cloves
  • 3 handfuls of mixed fresh oregano, parsley, and mint

Method

Peel the garlic cloves and put them in a food processor with the herbs, anchovies, bread crumbs, and lemon zest. Grind coarsely. Transfer the mixture to a bowl and add the pine nuts, raisins, and a couple of tablespoons of the oil. Stir your crunchy stuffing mixture and grind some pepper over it. Be sparse with salt, as the anchovies are pretty salty!
