A favorite little recipe that gives you plenty of options. Even without the chicken, this dish works just fine. In that case supplement the stew with some extra mushrooms, or add more tomato and turn it into a soup. See, you can make this into whatever you want.

You can grate some fresh Parmesan over it, but a drizzle of olive oil is more than enough for me.
