A remarkably simple but fun salad for all seasons.

Ingredients

For the Salad

  • 1 quarter white cabbage, very thinly sliced, using a mandolin or in the food processor
  • 1 bunch watercress, leaves only, or

Method

Combine all ingredients for the salad. Add the first four ingredients for the dressing in a tall container and purée until smooth. Pour in enough oil to create a creamy dressing. Pour over the salad and leave to stand so the flavours infuse.
