Pineapple Granita with Passion Fruit

  • 1 pineapple
  • 2 tbsp (approx cup) caster sugar
  • juic

Method

Peel the pineapple and remove the ‘eyes’. Cut the fruit into four sections and remove the core. Cut the fruit into chunks and puree into a pulp in the food processor.

Heat the sugar, lemon juice and water into a syrup in a saucepan. Add the pineapple pulp → Stir well!

Let if cool down and place in the freezer. Beat up every hour using a fork. After about 4-5 hours you will have
