Peel the pineapple and remove the ‘eyes’. Cut the fruit into four sections and remove the core. Cut the fruit into chunks and puree into a pulp in the food processor.
Heat the sugar, lemon juice and water into a syrup in a saucepan. Add the pineapple pulp → Stir well!
