Skate is available year-round, but you are most likely to find it in a fish store that caters to an Asian market. Skate may also be called ray (as in manta ray), though generally it is the edible members of the family that are skate, when the nonedible members are called ray. The winglike fins are the edible portions and the meat is firm, white, and rather sweet, like scallops.
