Here is another chow-mein using chicken instead of ham. With the chicken there is obviously a bit more work involved as the meat needs to be marinated.

Ingredients

  • 8 ounces dried Chinese egg noodles
  • 6 ounces skinned and boneless chicken breast fillet, cut into matchstick-sized pieces

Method

  • Plunge the noodles into a large pot of boiling water, return to a boil, and continue to cook for about 4 minutes, or until al dente, separating the noodles with a pair of chopsticks or a fork. Pour into a colander and refresh under cold running water. Drain thoroughly and leave in the colander for 1-2 hours.
