Semolina can be used for more than making traditional Dutch griesmeel pudding. In Rome they also know their way with it. The Romans use it for a savory dish that I would love to share with you here. The texture of gnocchi alla romana is very similar to that of polenta. But since we are using semolina, made from durum (a hard wheat variety), instead of cornmeal, it’s a bit different—lighter.
