After St. John’s Day on June 24 (or after June 21, the longest day of the year), white asparagus and rhubarb are no longer harvested. Our seasons are related to the position of the Earth relative to the sun, and after June 21 the Northern Hemisphere is turning farther away from the sun—the so-called summer solstice (our winter solstice is on December 21). This shift has an effect on nature. After the summer solstice, many plants develop flowers and young sprouts, or they grow out.
