The traditional thin-crust pizza from the French Alsace region isn’t topped with tomato sauce but with crème fraîche (as well as bacon and onion). While the French call this pizza variety tarte flambée, just across the border in Germany it’s known as flammkuchen. The Italians have their own tomato-free pizza. They replace the crème fraîche with mascarpone, and then top it according to regional taste and call it pizza bianca (white pizza). I like to eat my flammkuchen
