Assuming you too occasionally have dinner guests on the weekend, I want to introduce you to this dish. It’s incredibly easy, but still kind of impressive and delicious with steamed potatoes and a salad. It’s important that you bake the salmon very briefly—the top may be almost raw still, but just about warm; overcooked salmon is dry, and dull, and therefore a waste. You’ll recognize the “too-far-gone” moment immediately; you’ll start seeing white clotted protein on the fish. It’s inevitable
