- ½ lb. dried apricots
- ¼ cup lemon juice

Method
- Wash and drain the dried apricots, and place in a saucepan with 3¾ cups water. Leave to soak at room temperature for at least 4 hours, or overnight.
- When soaking is complete, simmer in the pan, covered, for about 30 minutes to soften and break up the fruit.
