Apricot Jam from Dried Apricots

  • ½ lb. dried apricots
  • ¼ cup lemon juice
  • 7 cups


  1. Wash and drain the dried apricots, and place in a saucepan with cups water. Leave to soak at room temperature for at least 4 hours, or overnight.
  2. When soaking is complete, simmer in the pan, covered, for about 30 minutes to soften and break up the fruit.
