  • 8 to 10 ripe bananas (should be soft but not black)
  • 6 cups sugar
  • Juice of 1 large


  1. Crush the bananas to a pulp with a potato masher or use a food processor or blender being careful not to overprocess and incorporate excess air. Crush part of the bananas at a time and measure as you go along. A quart glass measure works well for this. You will need 1 and ½
