  • ½ cup lime juice
  • ¼ cup cider, white wine or rice wine vinegar


  1. Finely grate the rind from the whole limes, juice them, and combine all the juice, rind, and vinegar in a blender or food processor. While the machine is running, keep adding pieces of cucumber. Blend until the mixture is smooth and measure 4 cups in all.
