  1. Remove the green part of the lime rind with a vegetable peeler and shred it thinly with a sharp knife. Process as much rind as you wish. Cut away all the white pith and outer membranes and discard them. Remove the fruit from between the membrane and squeeze any juice from the membranes. Discard the membranes and pith.
