This is a medium chutney.


  • 5 large ripe mangos
  • ½ cup raisins or currants
  • 1 small onion<


  1. Pare the mango and cut the fruit into small pieces. Chop the raisins (currants may be left whole), and peel and finely chop the onion. Mix together in a kettle with the mustard seed and the peeled and finely chopped ginger root. Add the brown sugar (using more for a sweeter chutney). Set aside.
