Start with any amount of canned pears, cut as you wish. Drain the syrup into a pan and add 1 teaspoon dried mint per can. Also a drop or two of green food coloring to add a nice color.
Simmer the syrup, covered, for 10 minutes and let steep, covered, for several hours or overnight.
Add the pears and simmer, covered, for 10 minutes.
Pack the hot pears into sterile jars and add boiling syrup to within ½ inch of the top and seal. Or pack in refrigerator containers and chill. Let it age at least two weeks for the flavor to soak into the pears.
