  • 1 long, slim english cucumber or 2 slim cucumbers
  • 3 tablespoons coarse salt


  1. Peel the cucumbers, if not using English cucumber, quarter lengthwise, remove seeds, and cut into chunks. Toss lightly with the salt and let stand overnight. Rinse and drain well.
  2. Combine the vinegar, water, sugar, salt, dill seed, chilies, garlic powder, and bay leaf, and simmer, covered, for 15 minutes. Let steep overnight.
