  • 2 qts. cut-up completely green tomatoes
  • ¼ cup coarse salt
  • ¼ medium


Day 1

  1. Grind the tomatoes, add the salt, and leave to drain overnight in a cloth bag or large strainer. This is necessary due to the high water content in tomatoes, which would make your relish runny.

Day 2

  1. Grind the cabbage and peppers, drain we
