  • hard-boiled eggs (as many as you like)
  • liquid from one of the pickled beets recipes (P. 90)

Method

  1. Hard-boil and shell as many eggs as desired. Place the hot eggs in a jar and cover with boiling beet pickle liquid. Refrigerate for several days before serving. Move the eggs around in the jar every day to avoid white spots. The eggs will add more color as long as they are stored and the white will become firmer but plan to use them within a week.
