Method

  1. Peel and chop the garlic cloves. In a small pan, combine the garlic with the white wine, chopped onion, and Italian herbs, which have been rubbed in your hand to release their flavor. Simmer, covered, for 15 minutes. Do not boil. Remove from the heat and let cool to room temperature. Let stand overnight to steep, if possible. Strain through a fine sieve into a spouted me
