Seeking a fresh take on classic lobster bisque, we set out to create a dairy-free (but equally decadent) version. Creamy coconut milk turned out to be the solution and, in turn, inspired the inclusion of flavors like lemongrass and ginger. The key to rich lobster flavor and overall depth is starting with homemade lobster stock—here, enriched with lemongrass—which can sometimes be a lengthy, complicated process. But we simplified it enough that you can have a delicious bisque within an hour.
