First, we think we can all agree that this is the most beautiful salad on the planet. Second, it is perhaps one of the most delicious. Our modern take on the classic Provençal niçoise salad swaps out the tuna for Dijon mustard-roasted salmon and a charred green onion pesto for the vinaigrette. The green onions are charred in a cast-iron pan over high heat, then blended with anchovies, capers, garlic, olive oil, and plenty of fresh herbs for brightness.
