Another spin on a classic, our Cobb is topped with New York strip steak instead of the usual chicken and paired with bitter chicories instead of iceberg or romaine, which we think balances the creamy blue cheese beautifully. We like to add grilled corn, but if your corn is in season, feel free to keep it raw to add an extra sweet crunch. We add sliced jalapeño chile for a spicy kick, but leave it out if that’s not your thing.
