Inspired by Belle’s mom’s recipe, a white bean pasta served on chilly East Coast nights, this dish is quick to whip together when you are craving a cozy meal. Paccheri, which comes in both smooth and ridged versions, is a large tubular pasta popular in southern Italy, but rigatoni, penne, or ziti would work equally well.
