The aromatic Middle Eastern blend known as za’atar is infinitely versatile and delicious sprinkled on everything from grilled meats and roasted vegetables to a bowl of hummus. And although you can buy it at the grocery store, we prefer homemade. Here, we sprinkle it over a whole side of salmon before grilling, then finish the dish with charred lemon slices and a shower of summery herbs for bright flavor.
