Chock-full of seafood and spicy chorizo, this Spanish-style paella will satisfy a hungry crowd. It calls for short-grain Bomba rice, but any Spanish paella variety will do. If paella is—or becomes—part of your cooking rotation, we suggest investing in a paella pan, which, because of its design, provides maximum surface area for the liquid to evaporate and the rice to crisp.
