A confit refers to any type of food that is preserved by means of cooking it low and slow in a liquid—typically fat. Here, cherry tomatoes are cooked in really good extra-virgin olive oil with balsamic, garlic, and rosemary until meltingly tender. The tomato confit is then served with fluffy ricotta and crunchy toasts. We think this dish is best served family-style as a hearty appetizer with a bottle of red or a round of our La Dolce Vita Spritz.
