We all love a properly fried french fry, but when we don’t feel like deep-frying, the oven is a great choice. In our opinion, russet potatoes make the best fries, hands-down. That’s because the high starch and low moisture result in a fluffy center with a nice crisp exterior. Idaho, Yukon Gold, and sweet potatoes will also work. Just avoid waxy varieties, such as new potatoes and fingerlings, which have too high a moisture content to bake properly. Serve these with our three favorite sauces
