The traditional evening meal in summer of Catalan peasants, this is also called verdura. When the French beans grow too big, cabbage is substituted.
Peel and cut the potatoes into four, put them in an earthenware bean- pot in water, bring to the boil, add salt. Top and tail the beans. Ten minutes after the water boils, put them in, with the onion cut in two. Boil for 15 minutes more, strain and serve. Each person helps himself to olive oil from the setrill, in this case a small glass bottle with a fine spout.
