Cut the red and yellow peppers in half and remove core and seeds. Slice the onion. Pour boiling water over the tomatoes, peel, seed and chop them. Cover the bottom of a solid pan with olive oil, set it on a low flame and put in the onion, peppers and tomatoes. Sprinkle with the herbs and a little salt and put on the lid. Simmer for a few minutes to allow the vegetables to produce some juice, th
