I love the pretty pink color the red wine vinegar and onion add to this salad dressing, and I use ground pink peppercorns to stay on theme! They are not always easy to find, so just use your favorite pepper. Walnut oil has a lovely flavor and is a good source of omega-3 fatty acids. You can serve this over any salad, but I particularly like it over arugula tossed with pickled or roasted beets. Add rotisserie chicken, hard-boiled eggs, and/or blue cheese for protein.
