Why do I call for bread flour? The high protein content in bread flour enhances gluten development, meaning loaves rise well and have a lovely texture. If it’s unavailable, you can use all-purpose flour with good results. I find home-baked breads with 100% whole wheat flour a bit dense, so I mix with bread or all-purpose flour.

Ingredients

  • 2 (¼-ounce) packages active dry

Method

Combine 2½ cups water and yeast in a bowl; let stand 5 minutes. Stir in honey and oil.

Fit mixer with a dough hook. Combine bread flour, whole wheat flour, ¾ cup oats, flaxseed, and salt in bowl, mixing until well blended.

Gradually pour in yeast mixture, mixing until dough starts to come together. Turn out onto a lightly floured surface.
