My dear friend Sheila Thomas suggested one of her favorite appetizers—whipped feta and fermented honey. I tweaked the idea and added a few more ingredients. I prefer a 5% milkfat plain Greek yogurt because plain lowfat tends to get watery. You can substitute other herbs like basil, oregano, or dill.

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 small garlic clove, minced
  • ¼ teaspoon

Method

Heat olive oil in a small skillet over medium heat. Add garlic and red pepper flakes. Cook 1 to 3 minutes. Stir in honey and cook 3 minutes. Cool slightly.

Combine feta, cream cheese, and yogurt in a food processor. Process until light and fluffy. Add honey mixture; process until well blended.

Spoon into a bowl or serving platter. Sprinkle with roasted pepper slices, mint, and b
