Braised and Honeyed Short Ribs

Beef short ribs have amazing flavor, which is reflected in their price tag! This cut is well marbled and requires long cooking times to make it fall-apart tender. One time my market only had half the amount of bone-in short ribs I needed, so I filled in the weight with a package of “boneless short ribs.” These are not true short ribs, but they work well because they require the same lengthy cook time and provide more meat.
