Honey-Lemon Cupcakes

These adorable cupcakes pair earthy honey with bright lemon flavor. Although sweetened with honey, I used a portion of granulated sugar because I like the texture it provides when beaten in with the butter. The unfrosted cupcakes and frosting keep well in the freezer if you want to make them ahead. Allow the frosting to come to room temperature and beat it a bit so it’s soft enough to easily frost the cupcakes.
