I first tasted these pickles over ten years ago. A great lady of Turkish origins prepared them, then refused to give me the recipe. Later when I asked again, she pretended she didn’t know what I was talking about, but I remembered. Years later I had something similar in a little diner in Galata, a beautiful neighbourhood in Istanbul, and recreated it at home. It is silly-simple but the flavour is everything you want from pickled cucumbers.
