Moroccan carrot pickle

A good friend introduced us to Daniel. A straight-talking New Yorker, publisher and poet, the bright white cloud of his hair is like a saint’s halo, though I’m sure he is anything but. He liked these pickles very much and made us an offer so obscene we dare not repeat it here, and though we could not accept, we gave him the recipe for this pickle.
