  • 1 small potato, peeled (about 150g)
  • ½ onion, peeled (about 60g)
  • 1 clove of garlic,

Method

Grate the potato, onion, garlic and courgettes on a coarse grater (you can use a food processor) and place in a sieve over a bowl. Sprinkle the salt over the vegetables and mix lightly. Allow to sit for at least 30 minutes at room temperature.

Put the eggs, herbs and black pepper in a mixing bowl. Squeeze out any excess liquid from the vegetables and add them to the bowl, then sprinkle
