It is best to make this salad in the spring, as the name suggests, when you can buy fresh pods of peas and broad beans that have superior flavour and texture. You will need to buy a much larger amount in the pod – about 250g of beans and 150g of peas – as the edible bits only make up a small part of the total weight (about 30% for broad beans and 50% for peas).
