Another dish that started by the beach, this one in Tel Aviv, in a place simply called ‘The Bulgarian’, where you’d get a loaf of white bread, white aubergine purée, roasted red peppers, white bean salad simply seasoned with onion and parsley, and very moreish kofta. We kept trying to figure out what went in them – the owner was such a crabby guy we didn’t dare to ask. Eventually we came up with these, which are a close approximation.
