These pretty fish are the prize of the Med with their sweet flesh and tight flakes – they are unlike any other. Dipped in flour, fried and served simply with fresh lemon, they make for a meal that is hard to beat, but this artichoke and preserved lemon treatment really highlights their unique flavour. This dish also works extremely well with bream, another Mediterranean star. We allow 150–200g filleted fish per person, but you can double the amount of fish without having to double the rest;
